Favorite TOFU Recipes
Lasagne With Tofu
1 # lasagna noodles, boiled ½ way done.
Red Sauce
Saute on med/low heat 5-10 minutes:
- 2 T oil
- 2 garlic cloves, minced
- 1 onion, chopped fine
- 2 ½ t salt
- 1/2 t pepper
- 1 t rosemary
- 1 t basil
- 1 T parsley
When onions are translucent add:
- 12 oz tom paste
- 1 1/2 c hot water
Simmer 5 min.
Layer red sauce between lasagne noodles alternating w/ cream sauce.(Optional)
Spread one layer (or more) with:1 # firm tofu, mashed or crumbled fine.
Top with noodle and red sauce.
Sprinkle with Nutritional yeast (Optional)
bake: 350 30 min, Remove Let sit 10 min. before slicing.
Tips / Options / Notes
You can substitute canned spaghetti or other marinara sauce for the red sauce here. One can, ofcourse, add "whatever" to the sauces, making it even better! Broccoli, spinach, mushrooms, sundried tomatoes, artichokes, olives....
